PRUNIER CAVIAR: THE PEARLS OF GOURMETS FROM SOUTHWEST FRANCES

You don't have to travel to the Far East to Iran or Russia to find the finest caviar enjoyment. Because the noble gourmet pearls can also be found in a small, idyllic town in southwestern France. There, the world-famous Prunier caviar is obtained from the Acipenser Baerii sturgeon under particularly sustainable conditions.

Prunier caviar: the gourmet pearls from the south-west of France

To find the place of origin of this globally celebrated Prunier caviar, you only have to go to the small town of Montpon-Ménestérol in the idyllic Dorogne countryside on the Isle River, in the Gironde department of the Aquitaine region. About an hour's drive from Bordeaux. There you will find aquaculture with around 150,000 sturgeons and caviar production facilities on the outskirts of the city. This is where the Acipenser Baerii sturgeons, famous for their excellent caviar, live in open-air pools. The pools are connected to the Isle by an open water cycle.

The famous Prunier caviar is obtained from the Siberian sturgeon

The Acipenser baerii belongs to the family of sturgeons and originally comes from the waters in the north of Kazakhstan, Mongolia, China and especially the Russian Siberia. That is why it is also called Siberian sturgeon. There they inhabit the deeper areas of large lakes and rivers with medium to strong currents. Usually the animals reach a length between 80 and 140 centimeters and a weight of approx. 65 kilograms. But they can also be up to two meters long and weigh 210 kg.
