Ingredients

    • 10 hard-boiled quail eggs
    • 6 tbsp herb tartar sauce
    • 0.5 tsp white pepper and finely ground Flor de Sal
    • 5 tsp black Prunier Caviar
    • 2 dashes of Worcester sauce
    • Freshly chopped parsley

    Preparation

    Place the fresh quail eggs in boiling water for 4 minutes. Then chill them under running cold water for several seconds and let them cool down completely. Peel the eggs, cutting the firm inner skin carefully with a sharp knife and slice them lengthways. Then carefully remove the egg yolk from the egg halves and press through a fine sieve. Mix in the mustard, herb remoulade and spices to make a fine paste. Then use a piping bag with a star-shaped nozzle to squeeze the mixture into the egg halves. Finally, add half a teaspoon of caviar to the filling and garnish with dill.

      • A whole baguette
      • Sour cream
